Mom’s Famous Cherry Cookies

Christmas Cookies

I was working on a recent podcast telling a story of my mom and her best friend and it included one of our favorite holiday traditions.  Every year my mom hosts a cookie exchange party.  One of Mom’s recipes has been a huge success and I’m sharing it here today.  Be sure to check out the story behind these amazing cookies here.

Cookie Ingredients:
1/2 cup shortening
1/2 cup butter, softened
3/4 cup sugar
1 egg
2 1/2 cups flour
1/2 teaspoon baking powder
1/8 teaspoon salt
1 teaspoon vanilla
8 dozen maraschino cherries

Heat oven to 375 degrees.  In large mixer bowl blend butter, shortening, sugar and egg.  Gradually add in flour.  If dough does not come together, add two to three tablespoons of milk.  Once flour is fully incorporated, stir in baking powder, salt and vanilla.  Use only enough dough to cover each cherry.  Shape cookie into a ball working quickly to avoid warming the dough.  Place two inches apart on ungreased baking sheet.  Bake 10 to 12 minutes. Cool.

Glaze ingredients:
2 cups confectioners sugar
3 tablespoons water
Food coloring
Sanding sugars (red and green)

Mix water with powdered sugar to create glaze.  Divide into bowls for each color you desire. White glaze looks lovely with colored sugar on top.  Dip top of each cookie in glaze and roll in sanding sugar if desired.  Makes 7 to 8 dozen.
